No Dates Caramel Slice

Who doesn’t love a good caramel slice? I sure do!

This recipe is awesome if you are trying to avoid dates. Dates are pretty hard to avoid these days if you are after a healthy treat, they are the base to many raw dessert recipes. I personally cant handle alot of them, I have a low tolerance level to many high FODMAP foods. I didn’t want to suffer from FOMO so i decided to make a delicious Dateless caramel slice.

You can get all the ingredients from your local bulk food/wholefoods store. If you don’t have a bulk food store near by choose recyclable materials over non recyclable when making your purchase.

No Dates Caramel slice (serves 8)
(Gluten free, Dairy Free, Refined sugar free, vegan)
(use organic ingredients where possible)

Base:

1 Cup Almond meal 
½ cup Shredded coconut
1/2 Cup Coconut oil (melted)

Caramel Layer:

1 cup Tahini
1/3 cup maple syrup

1/2 teaspoon of salt if you wanted salted caramel (yum!)

Chocolate layer:
1/3 cup coconut oil (melted)
1/4 cup cacao
2 Teaspoons maple syrup

Add all base ingredients into a bowl and mix together.
Line a small bread tin (I use one that is 21cm x 11cm) with baking paper*, add the base layer and push down firmly. Place in the freezer while making the caramel layer.

Add all ingredients for the caramel into a bowl and mix together. Pour onto the base layer and spread evenly. Place in the freezer while making the chocolate layer.

Add all ingredients for the chocolate into a bowl, mix together. Pour over top of the caramel and spread evenly. Place in the freezer for a further 10 minutes or until the chocolate has set.

Once the chocolate has set your caramel slice is ready to eat! If you like the caramel really gooey then leave it on the bench for 5 minutes or you can eat it straight from the freezer.

*When you take the slice out of the baking paper give it a wipe down with a warm cloth, let dry and you can re use it next time.
